I think you can can use Justins tip but using an IP address instead of the domainname: user2@<ip of other server>

But beware, doing this will cause your server to accept all dictionary spam attack mail, and try to send it to the other server. You're better off creating forwarders on the new server for all the accounts whose mail should be sent to the old server.

So you create user2@test.com as a forwarder on the new server, sending to user2@oldserver.test.com. Configure the old server to handle oldserver.test.com however you see fit (as a domain alias of test.com on that server, or vice-versa, or whatever else works for you).
