You will see something like this:

08:30:17.651 2 MAILBOX(jwark@tbaytel.net/Archives/2014) {17} appended @2944504: 59+1941 bytes
08:30:17.651 2 MAILBOX(jwark@tbaytel.net/INBOX) {529} deleted: cut off

I don't know what you'll see looking for IMAP type entries in the log, but you will see MAILBOX type actions.  Generally, something appended to a box and then something deleted from a different box.  This entry shows up for all kinds of protocol actions.

The only problem I have with it is it is hard to determine what connection actually made the modifications to the box.  You may have a customer with IMAP connections, a web session, some POP3 connections all happening at the same time.  I'm not sure how to tie the MAILBOX action to any one of those protocols.
